The Breadbox

Here is a list of the current recipes that are available to order. They are organized loosely by the type of bread or flavoring that is produced. To order, remember the number of the bread recipe…you’ll need that when you get to the order form. Feel free to vote on your favorites!

White Breads

W1.

Bugby Signature

This bread proofs for more than 12 hrs, giving it a little bit of a “sour dough” flavor. Artisan style recommended.

W2.

Peasant I

A “lean” white bread made using olive oil instead of butter as the fat. A very simple bread when you are looking for something basic.

W3.

Peasant II

An even “leaner” white bread that has replaced the original as Cheryl’s favorite! This one has no oil at all and is not kneaded to develop the gluten strands. It’s a little more rustic with a more open crumb structure (think holes more like Italian or Focaccia bread). Flour, yeast, salt, water and a little sugar – doesn’t much simpler than that!

W4.

Country White Sandwich

Basic white bread using milk and sugar. A little sweet and with a yeast flavor that lets you know this is homemade bread. Just like Grandma used to make!

W5.

Homestyle White Sandwich

A plain but hearty white bread with good crumb structure, great for sandwiches with just a touch of nuttiness from toasted wheat germ. Great for making stuffing!

W6.

English Muffin Toasting Bread

Cut off a piece and pop it in the toaster…looks and tastes like the real thing. Lots of tasty pockets and holes for that melted butter and crunchy cornmeal on the crust to satisfy your tastebuds!

Brown Breads

B1.

Sweet Molasses Brown

Delicious toasted or straight out of the bag, made with whole wheat, molasses and a touch of honey. Your sandwiches will never be the same.

B2.

Amish Soft Honey Wheat

Looking for a brown bread that’s a little lighter? Search no more….this bread uses honey instead of molasses, with a sweetness that sneaks up on you, sort of like a horse and buggy!

B3.

Icelandic Brown

Yet another variation of a brown bread. This one has a bit less molasses and adds some brown sugar for a subtle difference. Those folks in the Northland know how to keep warm…with happy tastebuds!

B4.

Brown Rice Bread

Who would have thought you could make bread that has rice in it? Yep and it tastes good too!

B5.

Multigrain Molasses Brown

Looking for something new to love? Look no further than this sweet and tender number that’s a little less hearty than the Harvest bread but still has great flavor due to molasses and multigrain cereal. YUM!

B6.

Multigrain Honey Wheat

Sometimes you need something sweet and tender but still has a bit of firmness – just sayin’. This bread fits the bill and makes a great sandwich bread.

Hearty Breads

H1.

Harvest Sandwich

A delicious blend of multigrain cereal, bran, rolled oats and multiple flours, loaded with sesame and poppy seeds and sweetened with honey. A crunchy, hearty bread packed with flavor and goodness.

H2.

Dilly Caraway Rye

Bring back memories of your last trip to the deli. This bread is a solid, dark rye with an added zing of some dill. A great flavor combination that works well as a sandwich loaf and also as dinner rolls!

H3.

Scandinavian Light Rye

Rustic texture and very light on the rye flavor. A great bread to have on a snowy day.

H4.

Swedish Limpa

Another hearty rye bread that works great with soups and sandwiches….and with that unmistakable taste of orange and rye.

H5.

Darko’s Special Low Gluten Multi-grain Honey Wheat

This is a recipe I developed for a friend that wanted less gluten but lots of nutrition and still tasted good. A portion of the flour is gluten-free almond flour but can also be made with oat or coconut flour both of which are also gluten-free. NOTE: this is NOT a gluten-free bread!

H6.

Cracked Wheat

Looking for a bread that has a little crunch to it? Look no further. This hearty bread is made with cracked wheat and molasses for a tasty change.

H7.

Struan Bread

This famous Scottish bread is typically made for Michaelmas, the Feast of St. Michael the Archangel. As he is the guardian of the harvest, it makes sense that this bread is loaded with grains- think oats, wheat, corn, rice, and bran.

H8.

Bohemian Black Bread (rye)

A dark rye bread that is soft and mild. Get as an artisan loaf and serve it with your favorite bratwurst or roast pork and a side of root vegetables and/or cabbage! Ja, sehr gut!

H9.

“The Works”

This one’s for Sam, who wanted something with a LOT of grains and crunchy things. This has it ALL, including rye, five types of wheat, teff, multigrain cereal, quinoa flakes, rolled oats, wheat and oat bran, sesame seeds, poppy seeds, sunflower seeds, pumpkin seeds, molasses and honey. Think edible brick….whew, that’s a mouthful!

Buns and Rolls

NOTE: Almost any bread recipe can be made as rolls instead of a bread loaf so if you had your heart set on having rolls made from one of my recipes, let me know and we’ll see if we can’t work out something!

R1.

Bugby Buns: Hot Dog

Made freeform, these tasty buns can be made plain or you can add sesame or poppy seeds on the top – just ask! Unlike the store bought kinds, you can get quantities that match the number of hotdogs you have, just tell me how many you want when you order!

R2.

Bugby Buns: Burger

These gems can handle the biggest burgers you care to throw on your grill! You can even use them for ordinary sandwiches if you want. Like the hot dog buns above, these can be topped with seeds and the quantities are variable, just tell me what you want when you order!

R3.

Potato Rolls

Growing up, my family traditionally had these rolls for every holiday. Dusted with a little flour on the top, they are tender and tasty and will take you back to a simpler time. These make great sandwiches for leftovers too!

R4.

Margaret Nestrom’s Delicious Crescent Rolls

Mrs. Nestrom was a member of our church where I grew up and she made the best crescent rolls, bringing them to church functions. This generations-old recipe is truly a labor of love but well worth it to have on your holiday table.

R5.

Cinnamon Rolls

Delivered frozen in a pan, just thaw them out, let rise and pop ’em in the oven for a sticky, tasty indulgence you’ll get addicted to. You can even get them with raisins, nuts or both added in…just ask!

R6.

Dark & Soft Restaurant Rolls

You know those yummy warm rolls you can get at the local steakhouse? Yes, those ones that are brown and kind of sweet? Look no further, you can get them here too!

Sweeter Breads and Holidays

S1.

Cinnamon- Raisin Oatmeal

OK, who doesn’t hate that cinnamon raisin bread that falls apart because of that cinnamon swirl? This bread takes care of that by mixing the cinnamon throughout the whole bread. Problem solved and tasty too!

S2.

Michigan Cherry Cinnamon Oatmeal

What could be better than mixing some Michigan cherries with your oatmeal? This is a great alternative to cinnamon-raisin bread and will take you up North with your first bite.

S3.

Chad’s Favorite: Cinnamon Oatmeal

Made with old fashioned oatmeal and a touch of cinnamon and no icky raisins…no wonder Chad likes it! You will too, especially toasted with some of your favorite jam spread on top!

S4.

Cardamom Bread

A Scandinavian tradition, this bread is aromatic and strongly flavored with freshly ground cardamom seed. Ask for it done in a braid – Bugby’s wife can always use the laugh, watching him trying to remember what strand goes over and what goes under!

S5.

Bugby’s Monkey

Everybody does their own version of this bread, but Bugby doesn’t monkey around! No store-bought rolls used here, no sir! This oozy, gooey, sweet, buttery indulgence is made from scratch and comes frozen and unbaked. Just thaw, let rise and pop it in your oven and soon you’ll be swinging from the chandelier (go really nutty and ask for pecans on top)!

Unique and Tasty

U1.

Loaded Baked Potato

That’s right, made with real mashed potatoes and includes chives, sour cream and even cheddar cheese. And you can pick it up and eat it with your hands!

U2.

Onion Dill

Looking for something different to add some interest to your sandwich? Try this bread made with sour cream, cottage cheese and fresh dill. (Yum!)

U3.

Whole Wheat Carrot Bread

What? You say you can make a bread that has carrots in it and tastes good? The answer of course is “yes”, and it has a beautiful orange color to boot. This is not spiced like carrot cake, just plain bread that happens to have some carrot in it and is orange.

U4.

Tomato Bread

This is a pretty good bread, and that says a lot coming from someone that hates tomatoes! Made with tomato paste, Italian seasoning and some onion flakes, this bread has a great flavor and unique color.

U5.

Spinach-Feta Bread

Bring a little of the Mediterranean to your table with this bread that includes chopped spinach and chunks of feta cheese. Makes a great artisan bread to go along with your spaghetti dinner!

U6.

Savory Stuffing Bread

Make a turkey sandwich with this bread and you’ll have Thanksgiving all over again! Made with seasonings used in stuffing mixes, I’m told it makes great grilled cheese sandwiches also. Your imagination is the limit on this bread!

Gluten Free

I am still working on some recipes for those of you seeking a good gluten-free alternative. So far I’ve got a banana-nut bread that isn’t too bad but is a bit grainy due to the rice flour I think, a hearty bread loaf that’s pretty tasty but can be a bit crumbly sometimes, and a copy of Ezekiel bread made from beans that can be a bit unpredictable as to it’s shape. Because these are not up to my standards, I don’t have them listed yet as I think they need more work. Having said that, I am happy to make you something if you’d like to try it.
